BLACK ANGUS FILLET OF BEEF WITH “THE TRUFFLE STYLE” AND ASPARAGUS

For 4 people | preparation time approx. 45 minutes

Ingredients:

300g Black Angus beef fillet

600g fresh asparagus

400g fresh green asparagus

200ml truffle cream “The Truffle Style”

200ml extra virgin olive oil

50 ml white Balsamic vinegar

25 ml light truffle oil

15 g course ground salt

5 g black ground peppercorns

Preparation:

Drizzle 4 plates with olive oil and spread with a brush.

Wash and peel the white and green asparagus thoroughly and remove the woody ends.. Brush the asparagus with olive oil, salt lightly and grill for approx.. 10 minutes (according to thickness) over indirect heat until light brown. Turn the asparagus occasionally.

Make a vinaigrette with the remaining olive oil, the balsamic vinegar and the truffle oil.

Cut the beef fillet into thin slices (the meat may be frozen beforehand for this purpose) and arrange on the plates.. Then season with the salt and pepper and marinate with the vinaigrette.

Arrange the grilled asparagus on the carpaccio. Garnish the plates a little and serve immediately.
