ARTICHOKES WITH PANCETTA AND “THE CEASAR STYLE”
For 4 people | preparation time approx.. 45 minutes
Ingredients:
8 small Breton artichokes (without choke)
200 g pancetta, diced
2 cloves of garlic, diced
4 shallots, diced
40 ml extra virgin olive oil
1 organic lemon, juice and zest
30 g flat-leaf parsley, coarsely chopped
20 g thyme
375 ml white whine
2000 ml vegetable stock
400 ml The Ceasar Stylecoarse ground saltblack ground peppercorns
Preparation:
Remove the outer leaves from the small artichokes, then cut them in half lengthways and remove any existing leaves.
Sauté the pancetta, garlic and shallot cubes in olive oil, deglaze with white wine, then add the lemon, thyme and parsley.
Briefly bring to the boil and add the stock.
Now add the prepared artichokes and cook. for approx 10 minutes. Dab the al dente artichoke halves dry and grill on a preheated grill for approx. 5 minutes on both sides.
Serve the artichokes immediately warm, with “The Caesar Style”.

Description
“The Caesar Style” cream with mayonnaise, hard cheese and capers is great with a salad at lunch or with TV snacks such as vegetable sticks or French fries. The light cream also tops off any freshly prepared sandwich. When addint milk in a 4:1 ratio, it becomes the signature dressing for the cult salad. A true all-rounder!
